Benefits of seasoning 

Seasoning provides a unique flavor to food. Mustard , cumin, garlic, ginger and onion are great starting points but you can use fresh herbs and chilli to spice things up, or then honey and sugar to sweeten your food. Seasoning include citrus peel, soy sauce, mustard, salt and pepper, and herbs and spices. Ideally, select seasoning that is complementary to your main ingredients such as dill for chicken or white fish, rosemary for lamb or even cinnamon for pork.

Benefits of marinade

Marinating is the process of soaking foods in seasoned and often acidic liquid to tenderise it, or impart flavour, or both.Marinating is used in cuisines, the world over. The key ingredients for marinade come in three groups mainly oils, acids ( such as vinegar or lemon juice ) and seasoning. A good marinade usually has a balanced and varied combinations of the three, depending on the type of food and the flavours you want to achieve. Other flavouring ingredients which can be used include beer, wine , honey, horseradish, anchovy, ketchup, soy sauce,tamari, Tabasco, fermented fish sauce, Worcestershire sauce and yogurt. The choices are literally , quite endless !

Safety Tips

Marinades used for raw meat or poultry can be used to baste ingredients as they cook or for a sauce. But they need to be boiled first to prevent contamination from the raw meat. Place the marinade in a saucepan over high heat and boil for five minutes.

Marinate meat, chicken and fish in the fridge to prevent the growth of harmful bacteria.
