Pancake ( Savory)

Savoury Pancakes


Ingredients

  • 2 Cups Flour
  • 2 Eggs
  • 3/4 Cups Water
  • 1 Cup Carrots, chopped/shredded
  • 1 Cup Long Beans, chopped
  • 1/2 Cup Whitebait
  • 1/2 Cup Garlic and Onions, Chopped

 A small translucent fish (Salanx Chinensis) abundant at certain seasons on the coasts of China and Japan, and used in the same manner as the European whitebait.



1. In a large plastic container, mix the flour and water until smooth and gooey.

  1. Break in the eggs and mix some more. Set aside.
  2. Fry the whitebait separately, scoop it out.
  3. Stirfry the onion and garlic, long beans, and carrots until everything's pretty much cooked. Then pour in the whitebait and slosh things around a little more.
  4. Scoop out the stirfry, allow it to cool, then mix it evenly with the dough.
  5. Add salt and pepper to taste.
  6. And that's your pancake batter all done!

Japanese Pancake


Okonomiyaki (Japanese Savoury Pancake)



  You can add any other grated vegetables that you have.

Okonomiyaki (Savoury Japanese Pancake)

Ingredients
1 cup flour (I used whole wheat flour)
3/4 cup dashi (or water)
1 egg
1/4 of a cabbage (shredded)
1 carrot (grated)
1 zucchini (grated)
1 green onion (chopped)
3 slices bacon
okonomiyaki sauce (or Worcestershire sauce)
mayonnaise
green onion (chopped)

Directions:

1. Mix the flour, dashi, egg, cabbage, carrot and zucchini in a large bowl.
2. Heat some oil in pan.
3. Pour in mixture and top with the bacon slices.
4. Cook on medium heat until golden brown on both sides, about 5-15 minutes per side.
5. Top with okonomiyaki sauce, mayonnaise and green onion and slice.

When turning the pancake I use a dinner plate to slide the pancake onto (cooked side). Then hold the nonstick pan over the plate and quickly flip back into pan to cook the other side. It's much easier to do it this way.


Savoury Veggie Pancake(Cheela)

Ingredients


2 Cups Suji (Semolina)

2 Cups Plain Yogurt

Salt

Kid Friendly:

1 finely grated yellow squash

1 finely grated carrot

OR

Traditional:

Half a chopped onion

2 finely chopped medium tomatoes

Handful of chopped cilantro

Green Chilis

Directions

- Combine the Suji (semolina) and yogurt and let it sit for 20 minutes
- While the Suji mixture is settling together chop or grate your veggies. By the time you are done with chopping and perhaps even some of the clean up if you are quick your mixture will be ready. If you are making the kid friendly version please use a very fine grater since these don't take long to cook and you want the veggies to be thin otherwise theY will taste raw.
- Add water to the batter because the mixture will have thickened and you want the consistency to be spreadable. The amount of water will depend on how thick the batter has gotten.
- Add salt and the veggies to the batter and mix
- Heat a pan and coat with oil
- Once the pan is hot add a scoop full of the batter and spread it around so that it's not too thick
- Do not flip until the bottom is cooked and most of the batter is dried up (2-3 minutes - exact time will depend on how powerful your stove is)
- Flip your pancake and cook for a couple more minutes
- It's ready to serve - eat it plain, with chutney, or ketchup

If you are making the Kid Friendly version once you have cooked theirs add some chilies and cilantro to the batter and it will add a little spice and be great for you to eat too!

Besan Cheela




Ingredients
1 cup chickflour
1 tablespoon chopped spring onion
1 tablespoon chopped methi /fenugrek leaves
1 tablespoon chopped coriander leaves
2 cloves garlic; minced
1 inch ginger; grated
1 green chilli; chopped fine or minced with the garlic
1/4 tspn ajma or 1 tspn chopped thyme
salt to taste
1 cup warm water
oil spray

makes 10 (31/2 inch diameter); enough for 2 people. If you want to make 2 plates for khana triple the recipe.




1. Mix the onions, coriander, fenugrek garlic, ginger chilli and flour.
2. Add salt and ajma, mix
3. Add water slowly to get a runny mixture, leave for 1/2 hour.
4. Heat a frying pan, spray with oil and put a small ladle of batter
5. Turn over when bubbles appear on the surface. Cook for a minute or so and place on kitchen paper to drain, repeat until all the batter is used up.
