White Beans and Sausages the T-fal Actifry Way.....

Preparation Time: 5 minutes
Cooking Time: 25 minutes
Serve: 4 people

Ingredients

  • 450 g (1 lb) pork sausages/chicken or turkey/cocktail sausages/Chorizos
  • 1 large onion, thinly sliced
  • 1 ActiFry spoon sunflower oil (or other oil)
  • 410 g (14 oz) can haricot or cannellini beans, rinsed and drained
  • 400 g (14 oz) can chopped tomatoes/or tomato puree
  • 1 ActiFry spoon dried mixed herbs
  • Salt and freshly ground black pepper, to taste
  • Chopped fresh parsley, to garnish (optional)

Preparation

1. Place the sausages in the ActiFry pan. Cook for 10 minutes. 2. Add the onion and cook in the fat from the sausages. If there is insufficient fat in the pan, pour in 1 ActiFry spoonful of oil. Cook for 5 minutes. 3. Add the beans, tomatoes,  dried herbs and seasoning. Cook for 10 minutes, or until the sausages are cooked. Garnish with chopped parsley, if desired, and serve with crusty bread or mashed potatoes. Variations: If the sauce is too thin for your taste, blend 1 ActiFry spoonful of cornflour with a little cold water, then stir this into the sausage mixture in the ActiFry. Cook for about 5minutes, or until the sauce is thickened.

Beans Stir Fry....Barbati


Ingredients:

a bunch of barbati / yard long beans, chopped up tiny
1 onion, chopped
1 tbsp ginger garlic paste
2 tbsp coconut
1 tbsp chilli powder
1/2 tsp turmeric powder
salt to taste

1/2 tsp urad daal
1/4 tsp mustard seeds
1/4 tsp jeera, cumin seeds
2 dry red chillies, broken
bunch of curry leaves
chopped coriander leaves for garnish

1-2 tbsp oil

Method:

Heat oil in pan. Add Urad daal and let it brown. Add mustard seeds and jeera, let them splutter.
Add the red chillies and curry leaves.
Add the onions and saute till translucent. Add the ginger-garlic paste and saute for a minute for adding the chopped barbati. Add salt and let cook until the barbati gets cooked. Add the chilli powder and fry it.
In the end add the coconut and mix it well into the barbati.
Garnish with chopped coriander leaves.
Serve with roti, chapati or with hot rice.

Weight Watchers Cuban Black Bean Salad




Makes 4 servings
Ingredients
1 (15 ounce) can black beans, drained and rinsed
1/2 cup red bell pepper, chopped
1/2 cup yellow bell pepper, chopped
3 tablespoons extra virgin olive oil
1/2 celery, chopped
1 clove garlic, crushed
2 tablespoons red onions, chopped
2 tablespoons freshly squeezed lemon juice
1 tablespoon chopped fresh parsley
1/4 teaspoon ground cumin
Preparation
1. Toss together the black beans, red and yellow bell peppers, onion, celery and parsley.
2. Whisk together the olive oil, lemon juice, garlic and cumin and toss into the bean mixture.

Nutritional information per serving: 241 calories, 10.8g fat, 9.9g fiber

String Beans with Hot Chilis Stir-fry

String beans with hot chilis stir-fry recipe


Prep time: 5 minutes
Total time: 15 minutes
Utensils:
Wok, plate.
Serves 2
Ingredients:
7 oz./200g string beans, remove the string, cut into 1-inch sections (P1)
1 tbsp.peppercorns
4 chilis
1 tsp.salt, or to taste
5 tbsps.vegetable oil

Directions:
1. Place a wok over medium-high heat, add 5 tbsps.vegetable oil and heat until it is shimmering on the bottom and very hot but not yet smoking, add the string beans and deep fry for 1-2 minutes (P2).

2. Drain them thoroughly and place on a plate for later use.
3. Pour off the excess oil from the wok, leaving about 2 tbsps.oil in the wok, heat till hot, saute peppercorns and chilis briefly until aromatic, about 1 minute, do not brown (P3).

4. Place the cooked string bean back into the wok and stir until thoroughly combined, taste and season with salt if necessary.

Szechuan Green Beans





600 gm french long beans; topped and tailed and cut into two
10 cloves garlic; crushed
4 inch ginger; grated
1 tablespoon oil

Mix the following ingredients
1 tsp red chilli flakes
1 tablespoon soya sauce
1 tables sesame oil
1 tablespoon rice vinegar

1. Steam the beans for 4 min
2. Heat the oil in a large frying pan / wok, add the onions and fry for 1 minute
3. Fry the garlic / ginger,
4 Add the beans and stir fry for a 2 minutes;
5. Add the mixture of chilli flakes, soya sauce, sesame oil and vinegar, mix, and cook for a 30 secs, the beans will be spotted with brown but still crunchy
4 Serve.
