Easy Lemon Shrimp Curry

Lemon Shrimp Stir-Fry Recipe

  • 1 tablespoon cornstarch
  • 1/2 teaspoon sugar
  • 1/2 teaspoon chicken bouillon granules
  • 1/4 teaspoon grated lemon peel
  • Dash pepper
  • 1/2 cup water
  • 4-1/2 teaspoons lemon juice
  • 1/2 pound uncooked medium shrimp, peeled and deveined
  • 1 tablespoon canola oil
  • 3/4 cup sliced celery
  • 1/2 medium green pepper, cut into strips
  • 1/2 medium sweet red pepper, cut into strips
  • 1 cup sliced fresh mushrooms
  • 3/4 cup fresh sugar snap peas
  • 1 green onion, sliced
  • 1 cup hot cooked long grain rice

Directions

  • In a small bowl, combine the first five ingredients. Stir in water and lemon juice until blended; set aside.
  • In a large skillet or wok, stir-fry shrimp in oil for 1-2 minutes or until no longer pink. Remove with a slotted spoon and keep warm. In the same pan, stir-fry celery and peppers for 2 minutes. Add the mushrooms, peas and onion; stir-fry 3-4 minutes longer or until vegetables are crisp-tender.
  • Stir cornstarch mixture and add to the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Add shrimp; heat through. Serve with rice. Yield: 2 servings.

Nutrition Facts: 1-1/2 cups shrimp mixture with 1/2 cup rice equals 326 calories, 9 g fat (1 g saturated fat), 168 mg cholesterol, 449 mg sodium, 39 g carbohydrate, 4 g fiber, 24 g protein. Diabetic Exchanges: 3 lean meat, 2 starch, 2 vegetable, 1-1/2 fat.

Tempura Prawns


Tempura Batter
75g (1/2 cup) cornflour (cornstarch)
75g (1/2 cup) plain flour
1 egg, lightly beaten (we use eggs with a minimum weight of 59g)
188ml (3/4 cup) cold soda water


Uncooked king prawns (the above recipe should make enough batter for up to 1.5kg of medium king prawns)

Shell and devein prawns. We left the tails on for presentation purposes.
Sift flours together in a medium bowl. Add egg and soda water and mix until just combined (it is okay if the batter is a little lumpy). Allow batter to stand for a few minutes.


Heat oil in a large saucepan or wok. Holding prawns by the tails, dip in the batter and allow excess to drain away. Deep-fry prawns until batter is very lightly browned and prawns have turned pink and are cooked through. (It is best to fry the prawns in batches, so as not to overcrowd the pan.)

Drain and serve

Prawns on Tofu with Noodles


 1 tub silken egg tofu (or any type of tofu you like), cut into 6 equal pieces
- 6 medium size fresh prawns, peeled keeping the tails intact (Suresh says fresh scallops work too!)
- 10g to 15g glass noodles (aka tang hoon, mung bean noodles), soaked and drained
- 1 spring onion, julienned
- crispy garlic and garlic oil (fry this first and set aside)

For the sauce
- 3 tbsp of light soy (I would reduce to 2 tbsp next time ... it depends which brand of soy sauce you use)
- 1 tbsp of Hua Tiao cooking wine
- 1/2 tbps sugar
- dash of sesame oil
- dash of white pepper
- a little grated ginger (I omitted and it was still good)

1. Soak glass noodles in hot water for 5 minutes and drain. Set aside. During this time, you can start heating up your steamer. I used a regular wok with cover.

2. Peel prawns, make a slit on each prawn and pierce the tail through, making a little "prawn ball".

3. Drape small mounds of glass noodles over tofu, then top with a prawn ball.

4. By this time, your steamer should be bubbling hot and ready for action. Spoon some sauce over the prawns (no need to use up all the sauce if it appears too much) and place the dish in the steamer. Steam on medium heat for 5 to 8 minutes. I steamed for 5 minutes and it was just right.

5. Top with julienned spring onions and crispy garlic, and drizzle with garlic oil liberally. I was so lazy, I used a pair of scissors to cut the (washed) spring onions directly over the dish! :P

6. Ready to be served! This dish is best eaten piping hot

Crispy Prawns....



Ingredients

15 tiger prawns

1 tbsp lemon juice

2 tsp red chilli powder

1 tbsp ginger-garlic paste

1 tbsp green chilli paste

1 tbsp freshly crushed peppercorns

1 cup bread crumbs

1 cup semolina(rava)

salt to taste

oil for deep frying

For the batter

1 cup Maida

1 tbsp rice flour

1 tbsp cornflour

1 tsp red chilli powder

a pinch of food colour

a pinch of cooking soda

salt to taste

Method 

  • Remove the shells but retain the tails of the prawns,Clean it and boil for 10 minutes,drain it and keep aside
  • Mix all the ingredients listed under batter with enough water to make a semi-thick paste
  • In a bowl, add prawns and marinate it with green chilli paste,red chilli powder, ginger-garlic paste,freshly crushed peppercorns,lemon juice,salt and refrigerate for 2 hours atleast
  • Mix bread crumbs and semolina and keep aside
  • Heat oil in a pan, dip the prawns in the batter and then roll it in breadcrumbs-semolina mixture and deep fry till its cooked and crisp and serve hot

Honey Garlic Prawns





Cooking Method:   Saute / Stir-fry
Serving Size:   4
Preparation Time:   5 mins
Cooking Time:   15 mins
Ingredients
prawn meat 12 ounce [, shelled]
salt 1 teaspoon
spring onion 1 stalk [, diced]
Honey Garlic Sauce 4 Tablespoon

Procedure
  1. Stir-fry shelled prawns for 2 mins.
  2. Add 1 tsp salt, 1 stalk diced spring onions and 4 tbsps Honey Garlic Sauce. Heat through.

Chilli Garlic Prawns


Ingredients: 

10 uncooked tiger prawns
3 red chillies (we used Indian chillies)
6 large garlic cloves minced
1/2 inch ginger minced
1 tbsp peanut/sesame oil
4 tbsp scallions finely chopped
salt and fresh pepper from the mill
Sauce:
4 tbsp tomato ketchup
3 tbsp light soy sauce
2 tbsp peanut/sesame oil
2 tbsp rice wine vinegar
2 tbsp corn starch
5 tbsp water
fresh pepper from the mill.

Method: Season the prawns with salt and pepper. Keep aside for 15 mins. Take a bowl. Mix together the  sauce ingredients and keep aside.  Heat a wok/pan. Add 2 tbsp of oil. Add the garlic, ginger, red chillies and prawns. Saute on high heat for 4 mins. Add the sauce mixture, mix well. Saute on high for another 4 mins or till the prawns are slightly pink. Garnish with scallions. Enjoy with white rice/ fried rice or as an appetizer.

Prawn cakes with coriander sambal

Prawn cakes with coriander sambal
A starter or nibble inspired by South Africa, with a hint of inspiration from India. It's low fat too
Ingredients



Ingredients

  • 3 slices white bread , halved
  • 2 shallots , halved
  • 1 garlic clove , crushed
  • 400g raw peeled prawns or skinned unsmoked haddock
  • generous grating fresh nutmeg
  • 1 large egg
  • 2 tbsp sunflower oil , for frying

  • 1 green pepper , deseeded
  • 1 green chilli , deseeded
  • slice fresh root ginger
  • 2 garlic cloves
  • 2 x 20g packs coriander
  • 1 tsp caster sugar
  • 2 tsp white malt vinegar
  • juice 1 small lemon

  • Method
      1. Put all the ingredients for the fishcakes, except the oil, in a food processor with seasoning and blitz until really well blended. Shape into 12-18 round patties, then chill for up to 1 day until ready to serve.
      2. Wash the food processor, then blitz all the sambal ingredients together to make a bright green, wet paste. Season and chill.
      3. When ready to serve, fry the fishcakes in the oil for a few mins on each side until golden - they will be firm, like Thai fishcakes rather than those made with potato. Pile onto a platter with a bowl of the sambal to serve with drinks, or plate up and serve as a starter.

Weight watchers chicken kebabs...prawn soup...kung pao chicken..shrimp balls

A very nice chicken kebabs recipe with a wonderful taste, that is much easier to make than the traditional procedure. Each kebab is only 2 points!
Serve them hot with your favorite salsa, mint chutney or sauce.
Weight Watchers Chicken Kebabs recipe
Makes 12 kebabs
Ingredients
2 chicken breasts
4 pieces bread
1/2 cup breadcrumbs
2 dried garlic
2 big onions
2 green chilies
1/2 teaspoon black pepper
salt (as required)
refined oil (for frying)
Preparation
1. Put chicken, onions, garlic, chillies, black pepper powder and salt in the blender and run until mixture is totally smooth (add very little water if at all necessary).
2. Transfer the mixture to the bowl.
3. Add bread crumbs and the bread pieces (crush them thoroughly with wet hands); mix them well using your hands.
4. Heat the oil in a pan (fill almost 5 1/2 inches for frying).
5. Take out small scoops of mixture, make small balls and flatten them a little before putting in the oil.
6. Fry on medium heat on both sides until well done.

Weight Watchers Hot and Sour Thai Prawn soup
Makes 4 servings
Ingredients
2 lbs uncooked large shrimp
2 shallots, chopped
garlic cloves, chopped
2 small red chilies, sliced
1 tablespoon peanut oil
1/4 cup fresh coriander leaves, chopped
2 sprigs fresh coriander, roots
2 tablespoons fish sauce
2 stalks fresh lemongrass, sliced
6 fresh kaffir lime leaves, roughly chopped
8 cups water
1/3 cup lemon juice
2 teaspoons brown sugar
Preparation
1. Shell and devein the prawns if you need to. Reserve the shells.
2. Heat oil over medium heat in a pan, add prawn shells, garlic and chilies, cook stirring (about 5 minutes or until the shells are red and the mixture is fragrant).
3. Add lemongrass, lime leaves, water, juice, sugar, sauce and coriander roots and simmer covered (for 30 minutes).
4. Strain the stock.
5. Place the strained stock, prawns, coriander leaves and shallots into a clean pan, and simmer covered (for about 3 minutes until the prawns are tender).

Kung Pao chicken is a classic dish in Sichuan (or Szechuan) cuisine. It has 11 points per serving, but it’s worth trying at least once because it’s so delicious.

Makes 3 servings
Ingredients
3 1/2 teaspoons cornstarch, divided
5 teaspoons soy sauce, divided
5 teaspoons dry sherry, divided
1/4 teaspoon salt
3 boneless skinless chicken breast halves, cut into bite-size pieces
1 tablespoon red wine vinegar
2 tablespoons chicken broth or water
1 1/2 teaspoons sugar
3 tablespoons vegetable oil, divided
1/3 cup salted peanuts
6-8 small dried hot chili peppers
1 1/2 teaspoons fresh ginger, minced
2 green onions, with tops, cut into 1 1/2-inch pieces

Preparation
1. For marinade, combine 2 tsp. cornstarch, 2 tsp. soy sauce, 2 tsp. sherry and salt in large bowl; mix well.
2. Add chicken; stir to coat well.

4. Combine remaining 1 1/2 tsp. cornstarch, 3 tsp. soy sauce, 3 tsp. sherry, vinegar, chicken broth and sugar in small bowl; mix well, set aside.
5. Heat 1 tbsp. oil in wok or large skillet over medium heat.
6. Add peanuts; cook and stir until lightly toasted.
7. Remove peanuts from wok; set aside. Heat remaining 2 tbsp. oil in wok over medium heat.
8. Add chili peppers; stir-fry until peppers just begin to char, about 1 minute. Increase heat to high.
9. Add chicken mixture; stir-fry 2 minutes.
10. Add ginger; stir-fry until chicken is no longer pink in center, about 1 minute. Add peanuts and onions; stir-fry 1 minute. Stir cornstarch mixture; add to wok.
11. Cook and stir until sauce boils and thickens.
12. Garnish, if desired.

his shrimp balls recipe is an easy to make appetizer that can be very popular at cocktail parties.
But be careful – just because one ball has 0 points doesn’t mean that ALL balls have 0 points!
Weight Watchers Shrimp Balls recipe
Makes 30 balls
Ingredients
1 lb fresh shrimp, shelled and deveined
1 slice bread, crusts removed,soaked in water and squeezed before using
1 teaspoon salt
1 egg, beaten
1 1/2 teaspoons cornstarch
1 teaspoon sherry wine
4 water chestnuts, finely chopped
1 cup cold water
vegetable oil, for frying
Preparation
1. Wash shrimp and dry well with a paper towel.
2. Chop or grind shrimp very fine; put into a bowl; add bread, salt, egg, cornstarch, sherry and water chestnuts; stir vigorously 1 minute until well mixed.
3. Dip a teaspoon into the cold water, then dip spoon into shrimp paste and scoop out enough to form a ball the size of a walnut;repeat this dipping process with each ball, it will prevent sticking.
4. Heat the oil to 375°, and as you’re dipping, drop in the balls and fry for about 2-3 minutes, turning halfway through.
5. Do about 4-5 at a time, if you try to do more the oil temperature will drop too much and your balls will be greasy!
6. Drain on paper towels.
7. Serve hot with any sauce of your choice.
