Baguette Pizza


Cut the Baguette horizontally 
and spread some Ketchup.
Add chopped Veggies (Onion,Bell Pepper, Cabbage,Tomato) and some grated Cheese.
Sprinkle salt, pepper and Oregano/Italian seasoning. 
Grill in the Microwave or Oven for about 5 mins...
Yummy snack is ready in no time..!!

Garlic Bread Recipe.....

Makes about 20 pieces.
125g salted butter (or unsalted butter with salt added to taste)
2 large garlic cloves, peeled and crushed (about 10g [1 1/2 teaspoons] crushed garlic)
1 tablespoon (5g) finely chopped parsley
1 large (450-500g) French bread stick (about 65cm long)

Preheat oven to 200 degrees Celsius (180 degrees Celsius fan-forced). Adjust the oven rack to the middle of the oven.


Place butter and garlic in a small saucepan over medium heat, stirring occasionally. When butter has melted, cook and stir for an additional minute. Remove from heat and stir in parsley. © exclusivelyfood.com.au

Using a serrated knife, cut the bread stick in half (to make it easier to fit in the oven). Cut each half in half horizontally.

Spoon the garlic butter onto the cut surfaces of the bread stick, distributing the garlic and parsley evenly.

Join buttered sides of bread together to re-form two half loaves.

Wrap each half loaf in aluminium foil, making sure the bread is fully enclosed. The garlic bread could be refrigerated or frozen at this stage (we suggest defrosting before baking).


Place garlic bread on a baking tray and cook for about 15 minutes or until hot in the centre.


Remove the aluminium foil. Using a serrated knife, cut the garlic bread into
serving-size pieces. Serve immediately.

2 naan recipes + Onion Kulcha Recipe



NAAN                      (makes 6-8)
1 tsp sugar
1 tsp fresh yeast
¾ cup warm water
1½ cups all-purpose flour
plus extra for dusting
1 tbsp oil
1¾ oz/50g unsalted butter plus extra for greasing
1 tsp onion seeds
salt to taste
GARLIC NAAN  
For garlic naan add 3-6 chopped garlic cloves to the dough.
  • Place the sugar and yeast in a small bowl or measuring cup, add the warm water and mix well until the yeast has dissolved. Let stand for 10 minutes, or until the mixture is frothy.
  • Sieve the flour. Place the flour in a large bowl. Make a well in the center, add the oil and salt, and pour in the yeast mixture. Mix with your hands to form a dough, adding more water, if necessary. Turn out onto a lightly floured counter and knead for 5 minutes, or until smooth.
  • Return the dough to the bowl, cover, and let rise in a warm place for 1½, or until it has doubled in size.
  • Preheat the broiler to high, and grease a sheet of foil. Turn a dough out onto a floured counter and knead for 2 min. Break off small balls with your hands and pat them into circles 4½ inches/12 cm in diameter and ½ inch/1 cm thick. 
  • Place the dough circles onto the grassed foil and cook under the very hot broiler for 7-10 minutes, turning twice, brushing with the butter and sprinkling with the onion seeds.
  • Serve warm or keep wrapped in foil until required.



ONION KULCHA        (makes 6)
1½ cup flour
2 onion, chopped
3 green chilies, chopped
2 tbsp coriander leaves chopped
1 tsp cumin seeds
½ tsp grated ginger
2 tbsp melted butter
salt to taste
vegetable oil
  • Sieve the flour.
    Mix all ingredients thoroughly and make a stiff dough by adding just enough water.
    Knead the dough and divide it into 6 portions.
    Roll out each portion of the dough into a thin round with the help of a little flour.
    Make a few light, horizontal slits on one side of each round.
    Cook on a hot tawa (griddle) on both sides using a little oil until golden brown spots come on top.
  • Serve hot.

Stuffed Parathas...Cabbage and Carrots


Ingredients:

1 cup grated or chopped Cabbage
1 cup grated carrot
salt ot taste
1 tbsp oil
pinch of turmeric
1 tsp coriander powder
1 tsp jeera powder
 whole wheat flour to knead into a soft dough



Method:

Add salt to the grated cabbage and keep aside for 10 minutes.
You will see that water will come out of the cabbage.
Add the carrot, oil, turmeric, coriander powder, jeera powder.
Add some more salt if required.
Add enough atta to knead into a soft dough. Keep aside to 20 minutes.
After 20 minutes, if you think the dough has become too soft, add some more atta and knead well.
Make into small balls and roll out the paratha. Heat a tava / tawa, and slowly fry the paratha. Should be on medium heat so as to allow the carrot and cabbage to cook.
Flip over after browning on one side. Lightly oil both sides before removing from the tava.

Cinnamon Rolls...



Dough
1 T active dry yeast
1/2 C warm water (105 deg F)
4 1/2 C all-purpose flour (22 1/2 oz)
1t kosher salt
4 large eggs
1/4 C sugar

1/2 C (1 stick) real butter at room temp
Filling
1/2 C (1 stick) real butter at room temp, divided
3/4 C packed brown sugar
1 T cinnamon
Glaze
1 C powdered sugar
2 T butter, melted
2 T milk or cream
1 t vanilla extract
In the bowl of a stand mixer, sprinkle the yeast over the water, allow to bloom for a few minutes, then whisk until smooth. Whisk in 1/2 C of the flour. Cover with plastic wrap and let stand in a warm spot for about 30 minutes.

Add the eggs, sugar, butter, salt, and remaining 4 cups flour to the yeast mixture. Fit the mixer with the dough hook and knead on medium speed until smooth 10-12 minutes. Add a bit more flour to reduce stickiness if needed.
Cover with plastic wrap, set in a warm spot and let rise until doubled, about 2 hours.

While dough is rising, prepare filling. Take 2 T of the stick of butter and set aside. Beat remaining butter, brown sugar, and cinnamon together until combined and slightly fluffy, about 1 minute. It will be rather thick.
Butter a 9×13 baking dish. Transfer the dough to a floured work surface. Roll out into a rectangle about 15×10 in. Spread filling onto dough. Use a spoon (or your fingers) to spread it out evenly and then roll up length-wise.
Do you all know the trick to cutting cinnamon rolls? If not, go grab your dental floss! A piece of thread works fine too.

First score the rolls so you know you’re going to cut evenly. Then slide the thread underneath the rolls, cross over the top and pull. You’ll get razor sharp cuts without smashing your pretty dough.

You can cut the rolls to your liking. This will make 12 small rolls, 10 medium ones, or 8 large rolls. I made 10, but put 2 in a little dish to cook separately.
Place cut side up in baking dish. Melt the reserved 2 T butter and brush on top of rolls. Cover tightly with plastic wrap and place in the fridge overnight.
The next morning, remove from refrigerator and let rise until half again as high, about 1 hour.

While rising mix glaze ingredients until combined.


Preheat the oven to 350. Bake until golden brown, about 30 minutes.

Let cool in the pan for 15 minutes. If you get impatient and wait about 47 seconds like I did then your glaze will instantly melt and fall into the crevices between the rolls. Then you’ll stick your finger in the little well so you can taste it and you’ll burn yourself and possibly let out an expletive. You’ll be so hurt you’ll have to stuff a cinnamon roll in your mouth to comfort yourself. And possibly another one because the first one was too hot to enjoy. Not that I have experience with any of this. Just trust me and let the rolls cool off a bit.
Then spread the glaze over them and serve.


Dinner Rolls....


2 c. whole milk (if you’re in a pinch, you can use 2%, but whole is best. Don’t use 1% or skim)
½ c. + 1 Tbsp. sugar, divided
1/3 c. (5 1/3 Tbsp.) butter
2 tsp. Kosher salt
pkgs. active dry yeast (or 4 1/2 tsp.), preferably bread machine yeast
2/3 c. warm (105-115-degree) water
8-9 c. all-purpose flour
3 beaten eggs
Combine milk, 1/2 c. sugar, butter, and salt in a medium saucepan. Heat over medium heat until butter melts. It’s salty. It’s sweet. Yum.
Remove from heat. Allow to cool to lukewarm. I usually rub some ice cubes along the sides of the pan or pop the entire pan in a sink full of ice cubes to cool the mixture down because this step can take forever. This step is really important because if the mixture is too hot, it will kill the yeast.
While the milk mixture is cooling, dissolve the yeast and 1 Tbsp. sugar in warm water. Let stand about 10 minutes. If the yeast hasn’t bubbled, you’ll need to repeat this step–moving on with yeast that hasn’t been activated properly will only end in heartache for you and hate mail for us.
In a large mixing bowl, combine 3 c. flour and milk mixture. Beat on low for 30 seconds, scraping sides of bowl constantly. Add yeast mixture and beat on high for 3 minutes.
Add beaten eggs. Why should you beat your eggs first? Same reason you should combine your dry ingredients before adding them to moist ingredients when making cookies and cakes–it ensures everything is well-mixed and can be evenly-distributed through your dough or batter. If you add the whole eggs, your dough may not be as consistent.
Stir in as much remaining flour as needed to make a soft dough. This dough should be very soft–it will be coming away from the sides of the bowl, but it will still stick to your finger when you touch it. Don’t worry, it will firm up during the rising process. Part of what makes these rolls so good is that they’re so soft and light; if you add too much flour, they will be heavy and dense. Place the bowl in a warm place and cover with a clean towel; allow to rise 1 hour.

Punch down dough. Lightly flour your work surface and turn dough out onto surface. Divide in half.
Spray 2 9×13 glass pans with cooking spray. Roll first portion of dough into a rectangle and then cut it into 12 equal-sized pieces. I like to use a pizza cutter because it has a blade on each side, so it cuts right through dough without sticking to the blade. This dough should be very easy to work with, almost like playdough. Shape each piece into a ball and place in prepared pan. Repeat with remaining dough in the second pan.
Cover with a clean cloth and allow to rise in a warm place for about 30 minutes. When dough has about 15-20 minutes to go (depending on your oven), preheat oven to 375.
Bake for 15-18 minutes or until golden-brown.
When done, remove from oven. Rub a stick of cold butter over the tops of the rolls. You must now eat one. Now. While it’s hot.
Then pop the rest into a bowl and no one will ever know that you cheated.

Leftover Roti/Chapati Dinner....Quick fix...


Ingredients
3- 4 Rotis/toritllas
Onion – 1, chopped finely
tomato - cubed into small pieces
Mustard seeds – ½ tsp
Turmeric – ½ tsp
2 Green chillies chopped
1 tbsp ginger garlic paste
1 tbsp cumin powder
1 tbsp garam masala powder
8-10 Curry leaves
Juice of half a lemon
2 tbsp Oil
Salt according to taste
Process

1.Heat the oil in a pan, when hot add mustard, ginger garlic paste,curry leaves, green chilies, all the dry masala's and tumeric powders and mix well.
2. Now Add the onion and saute till they turn golden brown, now add chopped tomatoes,fry for a minute or two and salt and mix well.
3. Shred roti/chapathi/ tortilla into small pieces
4. Add shredded roti to above mixture and toss well so that all the roti pieces are well coated, takes about a minute or two.
5. Remove from flame and add lemon juice and adjust salt accordingly
6. Garnish with corriander and enjoy it piping hot









  • 4 left over rotis/chapatis, cut into around 1 x 1/2 inch pieces
  • around 1 & a half cup of thinly shredded cabbage
  • 1/3 cup of frozen peas
  • 1/3 cup of frozen corn
  • 3-4 green chillies, chopped
  • 1 tsp. mustard seeds (rai)
  • few curry leaves
  • 2 Tbsp. of cooking oil
  • pinch of asafoetida(hing)
  • salt to taste
  • 1 tsp. turmeric powder(haldi)
  • 1 tsp. red chilli powder(lal mirch powder)
  • 1/2 cup dry roasted peanuts
  • 1 Tbsp. dry roasted sesame seeds
  • cilantro or green onions, chopped for decoration
  • juice of 1/2 a lime
  • Take a wide pan/wok/karahi, heat oil in that.
  • Add mustard seeds once they splutter add curry leaves, also add hing.
  • Turn the gas to high & add cabbage & cook it for 1-2 minutes on high heat only and then add peas & corn. Keep stirring veggies as it's on high heat.
  • After another minute or so add salt, turmeric, chilli powder & chopped green chillies.
  • After another minute or so add roti pieces, mix everything together. Once rotis get coating of all the flavors, around 2 minute, turn the gas off.
  • Sprinkle peanuts, sesame seeds and lime juice. Garnish with green onions or cilantro.

Note : 
this dish is done on high heat & no liquids are used, only little oil, so make sure U keep stirring the veggies otherwise they might stick to the bottom of pan. If needed use only a spoon or two of water. Cooking them quickly on high heat helps in retaining the crunchiness of cabbage. If  U prefer little water can be used & cabbage can be cooked till it's fully soft. Once dish is done Covering the pan with lid will also helps in getting some moisture to the dish & making it little more soft.






Vaghareli Roti
Ingredients:-
  • 5-6 Rotis, Cooked and then torn to pieces
  • 2 tbsp Oil
  • 1 tbsp Ginger-Chilli paste
  • 1/4 tsp Mustard Seeds
  • 1/2 tsp Cumin Seeds
  • 5-6 Curry Leaves
  • 1 cup Water
  • 1/2 cup Thick Yogurt
  • Pinch of Hing
  • Pinch of Turmeric
  • Cilantro, chopped
  • Salt to taste

Method:-

1. Heat oil in deep vessel with mustard and cumin seeds, until they crackle.

2. Add hing(Asafoetida), ginger-chili paste, turmeric, and curry leaves. Saute for minute.

3. Add water, salt and bring it to boil, then add rotis in it. Turn down the heat, Cover vessel with lid and cook rotis until all the water is aavaporated. Stir occasionally.

4. Add yogurt and stir. Cook for another 2-3 minutes.

5. Add cilantro and serve with hot tea.
