Grilled Tomato and Basil Bruschetta...Appetizer

Grilled Tomato and Basil Bruschetta

  • Crisco® Original No-Stick Cooking Spray
  • 4 to 6 ripe plum tomatoes, cored, seeded and diced
  • 2 tablespoons chopped fresh basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon cider or balsamic vinegar
  • 2 tablespoons Crisco® 100 % Extra Virgin Olive Oil
  • 12 thin slices Italian or French bread
  • Salt and pepper
  • Fresh basil leaves for garnish (optional)

  1. 1    COAT grill grate or broiler pan with no-stick cooking spray. Heat grill or broiler.

  2. 2.
    TOSS tomatoes with basil, salt, pepper, vinegar and oil in medium bowl. Let stand 10 minutes to blend flavors.

  3. 3.
    SPRAY both sides of bread slices with no-stick cooking spray. Sprinkle with salt and pepper. Grill about 5 minutes, turning once, or just until bread is lightly browned and crisp.

  4. 4.
    TOP with tomato mixture. Garnish with fresh basil leaves, if desired.
