Cucumber Pineapple Salad



Preparation Time: 10 mins
Makes 4 servings


Ingredients

2 1/2 cups sliced cucumber
1 cup sliced pineapple
1 cup shredded spinach (palak)

To Be Mixed Into A Dressing
1/2 cup thick low fat curds , beaten
2 tsp sugar
1 tsp lemon juice
1/2 tsp finely chopped celery
salt and freshly ground black pepper powderto taste

Method

  1. Combine the cucumber, pineapple and spinach together in a bowl and refrigerate to chill.
  2. Refrigerate the dressing to chill.
  3. Just before serving add the dressing and toss well. Serve chilled
